I made homemade coffee ice cream mix using egg yolks, cream, milk, sugar, and coffee two days ago and when I churned it, the mixture wouldn't thicken appropriately. I assumed it was because the machine and mixture weren't cold enough, so I decided to let it chill, but I was too busy to churn it again the same day. So I went back to it today and it thickened up pretty nicely, but I wanted to know if it's okay to eat before I serve it. I tasted a bit and it seemed fine, but the consistency is lumpier than I think it should be.
