How to jailbreak iPod touch?

I've decided to jailbreak my touch. What is the best jailbreak software and what are he advantages of it? I am currently in china so pls don't refer to YouTube or any video website as they are banned. A proxy or some sort of way to access YouTube would be great if you could. =D ......on the touch of coarse. If you can't then it fine.
